“Yamada Nishiki” and “Akita Sake Kotomachi” are used to create this sake. The rice is polished up to 40% and undergoes long-term low-temperature fermentation. This is a smooth and fruity sake and gen of master brewer intimacy.

Pasteurized only once, this sake is youthful and vibrant, with notes of toasted nut, fresh bread and lychee. Perfect for serving chilled with salads and fresh fish.

Hideyoshi Junmai Daiginjo
Pretty aroma of pineapple, lemon curd and fresh grapes. Delicate and refreshing with a citrus tail. A storage state in the sake cellar is good. The fragrance is like the fruit of the southern country. The taste of rice is rich.

Hideyoshi Shosei Junmai Ginjo
From Akita’s local rice comes this superbly balanced sake. Light and fruity, this sake reflects the natural beauty of the local area from which it comes. Translated the name Shosei means “Voice of the Pines”, or alternatively Aki No Ta meaning “The Fields of Autumn.”
